Homemade Peanut Butter

Tonight I made homemade peanut butter. I added two cups of peanuts to the food processor and processed adding a little peanut oil and a little olive oil and a pinch of kosher salt until creamy. It is not as creamy as commercial brands because they add emulsifiers and such (they also add sugar). I wanted to control the amount of sugar, oil and sodium I put in. I didn’t eat the whole two cups (wouldn’t that be something?), just two tablespoons. I also made some homemade hummus. I had raw broccoli, carrots, cauliflower and tomatoes with that and finished off the peppadews (sweet piquante peppers). This was about 600-700 calories.

For lunch today I was in Long Island and a couple of my colleagues took me to lunch. I rarely go away from the office building there for lunch because I don’t have a car. I had a nice salad, about 400 calories. I felt a little peckish later so I had a Nutrigrain bar from the vending machine, about 140 calories. Tonight I will have a smoothie, about 200 calories. On target for today.

I walked a mile and a quarter today and climbed lots of stairs.
