Say Cheese!

I made Mac and Cheese with Dreamfields low carb pasta for dinner. This is in the southern casserole style. I boiled the elbows last night and layered them with white and yellow extra sharp cheddar. After building the layers I poured over milk and eggs to make a custard and hold it together. Then tonight I baked for about 30-35 minutes. I like the top to be a little caramelized and crunchy and the inside to be creamy. It came out perfect and tasted great. Oh, and I added some onion to the layers which added a nice flavor.

Also, I made a stew of okra, tomatoes, onions, and squash.

Today I walked two and a half miles. It was a good day for food and activity. Lunch was from Maoz vegetarian, the salad box with falafel and veggies.

Just get the money!

I have spoken before about Maoz vegetarian, where I picked up lunch today. I like their food and they are very popular. In the picture above, snapped just after I picked up my falafel salad, they have a line out the door that goes for about 20-30 feet. Today they could not serve people as fast as they took the orders. People were crammed in a rush hour subway, but they kept taking orders and telling people to move in. Why? People had to wait anyway, so why pack everybody in like that? To get their money! It’s why airlines overbook. It’s why salesmen lie. Get the money and worry about fulfilling your promises later. If you can’t meet your obligations when the time comes, you’ll try to sell them something else. But take the money. It’s greedy and inconsiderate of the customer – and short-sighted. I like the food at Maoz, but after today, I will think twice about going there.

Now that I have finished my rant, my salad plus a banana is about 600 calories. I walked a mile when I went out to get lunch.

I Mozied over to Maoz

The smoothie last night made with coconut water was delicious. I must admit I did think it could have used a few ounces of rum or cachaca. The consistency, however, did not have the creaminess I like in a smoothie. I didn’t care for the coconut milk by itself, maybe I’ll try another brand and mix coconut milk and coconut water.

I walked a mile during my lunch hour today and on the way picked up this nice salad from Maoz Vegetarian (a restaurant chain starte in Amsterdam by expat Israelis.) They have a nice assortment of Middle Eastern vegetarian food. The ingredients seem to be fresh, and certainly tasty.

Lettuce, falafel, hummus, assorted veggies, tahini. Fruit is for snacking later. Orange thingy is a water bottle.

Altogether, fruit included, between 700-750 calories before dinner. I will try to add at least another half mile of walking today as I head home for a three day mini-vacation.
